Utilizing indigenous heirloom cultivars, these beans are processed using the full natural method—sorted by hand and dried on raised beds with the coffee cherry intact. This traditional technique allows the sugars of the fruit to permeate the bean, resulting in the complex, wine-like fruitiness that defines premium Ethiopian coffee.
